The Cave de l’Orlaya was established in 2016 when Mathilde Roux took over the domaine that had been created in 1982. She now takes care of this superb estate of 8 hectares that spans the magnificent terroir of Fully in the Swiss region of the Valais. The Roux family has had its roots in the world of wine for several generations, and Mathilde holds a Masters degree in Vine and Wine Sciences, and a National Diploma in Oenology. The majority of the vineyard is planted in some of the most ancient soils of granite and gneiss in all of Switzerland and the Alps. Fully sits on the “elbow” of the Rhone, and enjoys a very specific microclimate (hydrometry and winds) that strongly impacts the character of the indigenous grape varieties that grow there. The 80 parcels that make up the estate form a magnificent ensemble abounding in old vines. Almost all are on hillsides, and are tended by hand, using the most natural methods possible, in a constant quest for improvement. Since taking on this vineyard, Mathilde has employed practices that respect the environment, and she began the process of conversion to organic viticulture at the beginning of 2019. Three hectares are farmed naturally, with respect for the lunar cycle, to restore life to the soils and the vegetation, and fully anchor the vineyard in its ecosystem. Yields are strictly controlled, and the grapes are picked entirely by hand and treated with the utmost care on their journey to the cellar. There, the work is also of great precision and delicacy to allow each grape variety to achieve its full expression. La Cave de l’Orlaya produces only single varietal wines, made with absolute care for the grapes, with whole bunch pressing and maceration adaptation to each variety. The wines are aged in stainless steel, concrete vats, or oak barrels, depending on the requirements of each individual wine.
